Hummus is good, why do you think it’s eaten all over the world? Easy to make yes, kick in some lemon juice, flavorings and mix in your processor. The flavor profile is wide open, I have tried several batches and find this is my favorite so far.
Say hello to my little friend, a can of chipolte peppers in adobo sauce.
Use what you need and put the rest in a zip lock bag in the freezer. It’s there when you need it.
Ingredients:
- 1 can of chickpeas (drained)
- 2 tbsp tahini
- 2 tbsp olive oil
- 1 chipoltle pepper
- 1 and 1/2 tsp lemon juice
- 1/2 tsp adobo sauce
- 1/4 tsp minced garlic
- 1/8 tsp salt
Don’t make this complicated, put everything in the processor and blend for a couple of minutes. Add more olive oil or water to achieve your desired consistency.
Top it with:
Another chipotle pepper (chopped) to make the red sauce in the middle. Drizzle with some more olive oil and serve with pita chips. I didn’t have any pita chips so I made my own. That’s a whole other story.
