Ingredients:
- 1/2 cup milk
- 1/2 cup mayonnaise
- 2 eggs, slightly beaten
- 1 Tbsp. cornstarch
- 4 slices of bacon (cooked, crumbled)
- 1/2 cup shredded sharp cheese
- 1/2 cup cooked broccoli (chopped)
- chopped onions (optional)
- pie shell
Substitutions/Additions:
Originally this recipe called for 1/2 lb. browned sausage, I used the bacon instead. You could use turkey sausage or whatever you like. The veggies need to be seasoned and cooked, remember we are adding flavors in layers.
I added a small hand full of cherry tomatoes (quartered, lightly sauteed in olive oil). Use what you have and make it your own.
Prep:
In bowl, mix milk, mayonnaise, eggs, cornstarch, broccoli (or whatever veggies you want). Add bacon and cheese (sauteed onions if desired). I like to sprinkle the top with a little paprika for more color. Bake in 350 degree oven for 40 minutes.
I didn’t have a store bought pie crust so I made my own. It adds time to the prep but I was pleased with the results and the ingredients cost maybe 50 cents. The recipe was similar to this basic pie crust recipe but I didn’t use any sugar and instead of butter used 1/3 cup Crisco shortening. I did butter the dish.
