Pimento Cheese Calzone

Sometimes you get a special gift, yesterday my mom gave me some homemade Pimento cheese. She said I made to much and it’s about a week old, I said you brought it to the right place.

I’m blessed by both my parents, sorry for those that no longer have any. My brother Alex took his life 3 years ago and we will always struggle with his loss. If you are a survivor of suicide you know it never goes away.

Calzone:  Paints leg style

  • 2-1/2 cups four (A/P or bread)
  • 1 cup water (lukewarm)
  • 1/2 tablespoon sugar
  • 1/2 tablespoon yeast (used rapidrise)
  • 1/2 tablespoon salt

Mix in food processor, kneed and place in oiled bowl. Let rise for 2 hours and punch down. Place dough on floured surface and work into a rectangle.

Filling:

  • 1 cup pimento cheese
  • sliced ham, turkey, pepperoni, etc.
  • whatever else you have

Place dough on counter and roll out flat into a 12 X 14 rectangle. Fill with goodies and roll it up.

Let it rise covered with plastic wrap while you heat the oven to 450 degrees. Cut slits in the top and brush with egg (1 egg whisked) and sprinkle with sesame seeds. Cook for 15 minutes at 450 then turn down to 400 for the last 15.

Let it rest for 15 minutes. Then slice into serving pieces.
