Sirlion pimento cheese burgers

Every once in a while you have a food that makes you close your eyes while your eating it. Last weekend I had a pimento burger cooked medium (yes the restaurant actually cooked it with some pink) and that’s what I did while enjoying it. They obviously have fresh meat.

I said to myself I have to duplicate that sensation, so this is what I did.

Ingredients: 

  • 1 lb whole sirlion (cut into cubes)
  • 1/4 pound kielbasa (cut into small cubes)
  • 2 basil leaves (or 1 tsp ground)
  • 1/4 small onion
  • onion powder, garlic powder (pinch)
  • salt n pepper to taste
  • 1 piece of bread cubed
  • Buns

Recipe:

Cut sirlion into small cubes and put in freezer with the food processor blade. You want everything cold. Cut kielbasa into smaller cubes along with the onion, chop basil and bread.

When meat is a little frozen (about 15 minutes) place in processor with the rest of ingredients and pulse till blended. This actually smelled wonderfull with a fresh smell.

Form into patties and cook each side on medium heat for 5 minutes. The cook time is up to a lot of variables, use your own judgement. If your scared cook until no pink. I used my cast iron grill pan that was preheated for about 15 minutes.

I served them on English muffins topped with pimento cheese then toasted. My goal was achieved eyes shut while eating. The fresh patio tomato from my patio was a bonus.
