Easy Fruit Cobbler

Glad I mowed my grass today, we had a break from the 101 heat. Not really expecting a 20 degree drop over night but thankfull. I live in the peach belt also known as the bible belt it’s not a bad thing we get plenty of fresh peaches.

What you will need:

  • 4 large peaches or 1 quart of fruit
  • 1 cup self-rising flower or (1 cup A/P flower with 1 tablespoon baking powder)
  • 1 cup sugar
  • 1 cup milk
  • 1 stick unsalted butter

Prep:

Melt butter in a 9 X 13 inch pan or oven proof dish.

Mix flour, sugar and milk together and pour over the melted butter.

Next cut a small x in the bottom of the peach and add to boiling water and then shut of heat. After about 10 minutes remove and peel, yes they will be hot. I find it easiest to cut them into slices, try and keep some slices intact for presentation on top.

Add the sliced peaches to the top of the mix, bake at 350 degrees for 1 hour. If your running out of time crank it to 375 and cook for 30 minutes. Here is a photo of it going into oven.
