Pan Pizza

This is what I would consider a successful home pizza. No fancy measuring, no pizza peel, none of that complicated stuff. My mom stopped by and had a couple of pieces and said “really good” several times.

Last nights Tamale Pie didn’t turn out how I wanted, alot of time with marginal results. Dejected but determined I just keep on swinging (baseball term).

You will need 2 cake pans (9″) and a food processor or stand mixer to make this. It can be made by hand if you have to.

Crust Ingredients: (makes 2)

  • 2-1/3 cup all purpose flour (prefer unbleached)
  • 1/2 tsp. salt
  • 1 pack ADY yeast or 2-1/4 tsp. instant (rapid rise)
  • 1 shy cup milk (200 ml)
  • 2 Tbls. EVOO
  • 2 tsp.sugar

Make crust:

Turn oven on to 200F and turn off when temp reached. In a mixer or food processor blend dry with wet, if using ADY yeast add to milk. Roll out on floured surface and kneed for a few minutes. Place in a oiled bowl roll around  and cover with plastic wrap then place in oven for 30 minutes to rise.

Once risen cut in half and roll out 2 dough crust 9″ in diameter. Add 3 tablespoons oil to each pan and carefully place in the dough (no oil should go above the dough).

Pre heat oven to 400F.

Sauce:

  • 1 can 16oz. whole tomato’s
  • 2 Tbls. EVOO
  • 2 cloves minced garlic
  • 1 pinch dried oregano

Add oil to pan and heat garlic till you smell it, then add tomato (drained) pulling them apart and removing any hard pieces. Cut off heat you don’t need to cook it. You will only need about 3 Tablespoons sauce on each pizza. Save the rest for another dish.

Topping:

  • 1 cup mozzarella cheese (each)
  • Pepperoni (microwave between 2 paper towels for 30 seconds)
  • Whatever else you have preferably satuee them first

Bake at 400 degrees F for 20 minutes.

The first 2 were pepperoni then I ran out. The next 2 had hamburger, onion. pepper. mushrooms on one and just hamburger/cooked bacon on the other.
