Ingredients:
- 3 lb or so fryer, cut up
- 1/4 tsp. garlic salt
- pepper to taste (fresh sage if you have have it)
- 1/4 cup unsalted butter, melted
- 2 c. crushed potato chips
Prep:
Sprinkle garlic salt and pepper on chicken. Let set for 15 to 20 minutes. Preheat oven to 350 and get everything else “mise en place”.
Dip chicken in melted butter and roll in crushed potato chips. Place skin side up and not touching in greased pan (I used parchment). Sprinkle with any remaining butter or crumbs. Bake at 350 degress for 1 hour, if using larger bird cook longer.
Bonus round:
The fresh no hormone cage free chicken came with a liver, thank you God. Added salt, pepper, garlic powder, tarragon, cayenne and pan seared it in a little grape seed oil and butter. Cooked it with a shade of pink inside and I’m closing my eyes and savoring each bite.
