My friend at work is originally from the Ukraine and he shared a taste of “Koleti” with me at lunch. It’s a mixture of ground beef/pork/chicken basically any meet you have, breaded and pan fried.
All I had was some grass fed beef (85/15) and decided to make my own version.
Ingredients:
- 1 lb. ground beef (used grass fed lean)
- 1 egg (whisked)
- 2 tablespoons chopped onion
- 1 tablespoon bell or hot pepper
- 1 slice bread (soaked in milk)
- 1 large clove garlic (minced)
- salt/pepper to taste
- maybe a pinch of dried oregano, basil and cayenne
Mix all of the above and form into uniform patties. Toss the patties in a little bread crumb and cook in a hot pan with a little oil.
Cook 4/5 minutes per side until golden brown on each side. No major juices should be flowing from the burger (don’t overcook).
Serve on the bread you have, mine was on baguettes toasted with mayo and melted American cheese. Some Hawaiian bread would have been over the top.
After months of debate I got a new skillet with lid and am very pleased. It’s “All-Clad” and a work of art. I know there are less expensive quality copies but this pan and lid are expertly made. Thankfully we still make something here in the USA and God sent me one.
I broke down and bought some BBQ pork rinds, they kept looking at me all week at the grocery.
