In my youth I remember my Aunt Mary’s onion casserole and I have the dish she used to cook it with. I just didn’t have the recipe, but after a 30 minute phone call now I do (we had alot to catch up on).
This is not an entree but a condiment to whatever your having.
Ingredients:
- 5 medium onions sliced equally
- 1 stick melted butter (unsalted)
- 2 cups Ritz crackers (1 tube)
- 1/4 cup fresh grated Parmesan
Prep:
Cook onions in the melted butter until translucent, this is your main cook.
Butter a small casserole dish (2/3 qts.) and layer your onions, cracker crumbs and cheese. Start over again with the onions, crackers and cheese.
Bake at 350 degrees F until slightly brown.
It goes very well with any meal and really good on the hamburger I just had.
