Pimento Cheese

Yes it’s worth the effort, easy to make and unlike store brands you know whats in it.

Ingredients:

  • 1 cup sharp cheddar cheese (freshly grated)
  •  1/4 cup mayonnaise (prefer Dukes, Hellman’s is ok)
  • 2 Tbsp pimento peppers (drained, chopped)
  • 1/2 jalapeno pepper (finely grated) or substitute scallions
  • 1/2 tsp salt
  • 1/8 tsp cayenne (to taste)

Mix ingredients in a bowl and serve on toasted baguette slices or crackers. If you don’t want the heat substitute the sliced green onion for the jalapeno.
