Brussels Sprout Love

I love to watch Jacques Pepin cook on PBS and youtube, he makes everything look so easy. He is truly a master of the art of cooking. Recently he did a really simple Brussels sprout and bacon and I just happened to have some frozen Brussels and bacon.

Ingredients:

  • 1 bag of frozen Brussels sprouts (about 1 lb.)
  • 3 pieces of bacon
  • Salt and pepper to taste
  • Extra virgin olive oil (use at the end of cooking)

Prep:

Thaw sprouts (if using frozen) and if they are fresh trim of the stem end and any damaged pieces. Using a food processor (or knife) slice the sprouts into pieces. Use the blade that only has the one knife edge. Chop bacon with a knife and brown until crispy in a skillet (get them really crisp).

I removed about 2 tablespoon of the fat and left about 1 in the pan with the bacon. Add the sprouts and combine, add a pinch of salt and freshly ground black pepper. Cover and stir occasionally until done. Add a little water if it gets to dry, then taste and re-season with salt. It took about 10 minutes for mine to cook (if it’s too wet keep the lid off). Sprinkle on the olive oil at the end of cooking and again taste and re-season for salt.

Sprouts don’t just have to be for Thanksgiving, if you put bacon in it maybe even the kids will like it. Goes well with pork and is a great side dish. This amount would serve at least 6 portions.
