Ham & Potato Pie


  • 1/2 slice of smoked ham (4 oz. diced)
  • 2 eggs
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1-1/2 cup grated sharp cheese
  • 1/3 cup green onion (scallions)
  • dash pepper
  • 4 red potato’s (sliced evenly)

Cook your sliced potato in 1/4″ water with butter, cover for 15 minutes and remove cover. Let those puppies sizzle and brown on one side until water is gone.

Place in a buttered pie pan, mash with potato masher and form crust (use your fingers).


Mix all ingredients together, pour into 1 deep pie pan filled with mashed potato’s. Bake at 325 degrees F. for 50 minutes.


I topped it with some fresh chives and served with my leftover broccoli salad.


Sometimes when I cook I make whale phonic sounds to myself, it usually means I’m happy at that moment.
