- 1/2 slice of smoked ham (4 oz. diced)
- 2 eggs
- 1/2 cup mayonnaise
- 1/2 cup milk
- 1-1/2 cup grated sharp cheese
- 1/3 cup green onion (scallions)
- dash pepper
- 4 red potato’s (sliced evenly)
Cook your sliced potato in 1/4″ water with butter, cover for 15 minutes and remove cover. Let those puppies sizzle and brown on one side until water is gone.
Place in a buttered pie pan, mash with potato masher and form crust (use your fingers).
Mix all ingredients together, pour into 1 deep pie pan filled with mashed potato’s. Bake at 325 degrees F. for 50 minutes.
I topped it with some fresh chives and served with my leftover broccoli salad.
