Growing up we had the “Easy Bake” toy ovens they really didn’t bake anything it was just a light bulb. Tonight I wanted to see if you can really cook a decent meal in a toaster oven.
This was a one person meal because I have a very small toaster oven. I cooked it En Papillote (French for wrapped in paper or foil).
Ingredients:
- 1 beer brat sausage (substitute what ever you have)
- 2 small red potatoes (quartered)
- 1 carrot (sliced even)
- 2 mushrooms (quartered)
- 2 cloves garlic (whole, skin on)
- Olive oil, salt & pepper, thyme (sprinkle)
Prep:
Add sausage to the middle of a piece of foil and surround with the veggies. Always use the dull side of the foil towards the items being cooked (non stick). Drizzle with EVOO and add seasonings. Wrap up the mix in the foil and crank that little sucker to 400 degrees F. Roast for 1 to 1-1/2 hour.
I use some oven safe dishes on top to help insulate the oven in my econo rig.
Once you think it’s done poke a knife thru the potatoes and carrots to see if it’s really done. The mushrooms will give off moisture helping to steam everything.
It worked for me, very satisfied with the simple hands free cooking.
