Toaster Oven Brisket

It has been a while since I have made any post, the boating industry in the States kinda sucks the life out of you (for 6 months during summer). Recovering now and lately have been thinking I may change direction on the blog to toaster oven dad. All the children are gone and the large oven I used almost nightly has been changed to the small toaster oven.

So I wondered if a small 1 lb beef brisket would work in the $29 toaster oven. It uses 1/7th of the electricity so worth a try just for that reason.

Ingredients:

  • 1 to 1-1/2 lb small beef brisket
  • 1 cup apple juice or stock
  • salt and pepper (heavy)
  • 1/2 onion
  • 2 bay leaves

Prep:

Trim fat cap from brisket, I left a little about 1/8th inch season with salt and pepper. Sear both sides in a pan (heavy if you have it). Remove and add stock or juice, onions and bay leaves and deglaze the pan.

Transfer the onions and stock to a baking dish and add the brisket.

Cover tightly in foil and cook in oven at 400 F for 3 hours.

Remove from oven and let cool for at least 15 minutes. Then cut across the grain and serve with the pan juices. It makes a tasty sandwich.
